<strong><span style="color: #674ea7;">Ingredients:</span></strong><br />
<ul>
<li>1 1/2 cups All-purpose Flour</li>
<li>1/4 teaspoon Baking Powder</li>
<li>1/4 teaspoon Baking Soda</li>
<li>1/4 teaspoon Salt</li>
<li>1/2 cup softened Butter</li>
<li>1 cup Sugar</li>
<li>3 Eggs (I used duck eggs)</li>
<li>3/4 cup Plain Yogurt (I bet that lemon yogurt would be good too)</li>
<li>Juice from one Lemon (1 Tablespoon)</li>
<li>1 Teaspoon Vanilla Extract</li>
<li>1/4 teaspoon Lemon extract</li>
<li>Zest from one Lemon (about a heaping teaspoon)</li>
<li>1 Tablespoon dried Lavender (food grade)</li>
</ul>
<strong><span style="color: #674ea7;">For the glaze:</span></strong><br />
<ul>
<li>1/4 cup confectioners sugar</li>
<li>Juice of half a lemon (or add more to the consistency you wish)</li>
</ul>
<strong><span style="color: #674ea7;">Directions:</span></strong><br />
<ol>
<li>Preheat oven to 325 degrees Fahrenheit. Grease one 9" x 5" loaf pan and set aside.</li>
<li>In a medium bowl sift together the flour, baking powder, baking soda and salt. Set aside.</li>
<li>In the bowl of a stand mixer cream the butter. Gradually add the sugar and beat until light and fluffy, about 7 minutes.</li>
<li>Add the eggs one at a time, mixing each egg until it is fully incorporated.</li>
<li>To the creamed butter and sugar mixture, slowly add the dry ingredients, alternating with the yogurt and mix it all together just until all ingredients are incorporated</li>
<li>Add the lemon juice, vanilla and lemon extracts and the lemon zest and beat on low just until blended.</li>
<li>Gently fold in the lavender.</li>
<li>Pour the batter into the prepared pan and bake for about 60 minutes or until the edges begin to brown and a toothpick inserted in the center of the loaf comes out clean. <em><strong>( NOTE: the original recipe said to bake 45 minutes but I found that that was not nearly long enough. You will want to watch and judge how your oven bakes.)</strong></em></li>
<li>Cool in the loaf pan for 15 minutes before transferring to a wire rack.</li>
<li>For the glaze, put the confectioners sugar in a small bowl and add the lemon juice a little at a time until a drizzle/pouring consistence is reached. Then drizzle over the cooled cake.</li>

You know summer has arrived when it is time to get out the canning pot and preserve some of those yummy strawberries. I made some strawberry jam decided this time to try out a new recipe: Strawberry Jam with Balsamic Vinegar and Pepper. It's really something special! Imagine the sweetness of Strawberry Jam that has notes of Balsamic Vinegar and the <span style="background-color: white;">heat of black pepper. This jam will be wonderful with goat cheese and crackers. Or poured over a block of cream cheese and served as an appetizer on crackers. And how about serving it with fish? I'm also thinking it would make a yummy sweat salsa-like accompaniment to fish tacos. The possibilities are many!</span><br />

<ul>
<li><div style="text-align: left;">
2 pounds of fresh, cleaned and hulled STRAWBERRIES</div>
</li>
<li><div style="text-align: left;">
4 cups of sugar</div>
</li>
<li><div style="text-align: left;">
1/4 cup of Balsamic Vinegar</div>
</li>
<li><div style="text-align: left;">
2 teaspoons of black pepper</div>
</li>
<li><div style="text-align: left;">
The juice of one lemon</div>
</li>
</ul>
<div style="text-align: left;">
<strong><em>Instructions:</em></strong></div>
<ol>
<li><div style="text-align: left;">
Prepare your jelly jars by washing thoroughly and placing the jars and lids in boiling water for 10 minutes. Keep the jars in the HOT water until you are ready to fill the jars with the jam.</div>
</li>
<li><div style="text-align: left;">
Place the strawberries in a heavy bottomed saucepan and mash the berries with a potato masher to crush.</div>
</li>
<li><div style="text-align: left;">
Add the sugar, balsamic vinegar, black pepper and lemon juice to the pan with the strawberries and stir well to mix them.</div>
</li>
<li><div style="text-align: left;">
Stir over low heat until all if the sugar has dissolved.</div>
</li>
<li><div style="text-align: left;">
Turn the heat to high until the mixture comes to a full boil. Stir often to prevent scorching.</div>
</li>
<li><div style="text-align: left;">
Once the berry mixture reaches a full boil, turn the heat down but continue to boil the mixture until it reaches 220 degrees Fahrenheit on a candy thermometer. Watch very closely and stir often!</div>
</li>
<li><div style="text-align: left;">
Remove and drain the jars and lids from the hot water with tongs</div>
</li>
<li><div style="text-align: left;">
Ladle the hot jam into the hot sterile jars, leaving about 1/2 inch headspace, then seal with the lids and process using the water bath canning method.</div>
</li>

I made Strawberry Jam infused with Balsamic Vinegar and Black Pepper this week. YUM! YUM! It's sweet and spicy and delicious. But more later about the jam.<br />

Sometimes when taking the tops, leaves and hulls out of the berries when prepping them for the jam, a lot of the berry gets wasted when you cut it. Well! I have an easy way to hull the berries. It's super simple to do and it gets the hull out of the berry without having to cut the top off. All you need is a drinking straw. The Mister acted as my hand model and demonstrated the process of hulling strawberries with a drinking straw in this little video.</div>

Yep! This is how chicks and ducks arrive through the post. Inside the box are special warmers so that the day old chicks and ducklings stay warm. My sweet barn cat, Masha, was the postal inspector. After a quick sniff I took the ducklings inside the house to their brooder.<br />

Like everyone else, here at Gypsy's Pasture we are eagerly awaiting Spring after a very cold, long, snowy and blustery winter. To me, spring means new life new seedlings sprouting, new baby animals born, new goals and ... well... a whole new attitude. </div>

They arrived from a hatchery located in California so these wee babies were born on Monday and arrived via USPS on Wednesday. I had my brooder all set up and ready when I got the call from the post office that my little ones had arrived.</div>

I have a heat lamp over them so that is why the photos glow with a reddish color. Both ducklings, who I am naming Daisy Mae and Dolly Parton, drank and ate immediately. They are active and hungry and settled in the spare bathtub just beautifully.</div>

This is the card I made for my precious granddaughter's Bris Bat. I computer generated her Hebrew name, which means Sarah, onto pink card stock and then used my stamp positioner to stamp the baby onesie, made by Stampin' Up!, over her name. Next I fussy cut the onsie and mounted it on scalloped and straight edged Nestabilities ovals. I added a some pink liquid pearls to the scallops and mounted it on white and pink cardstock with a little pink polka dot ribbon to match. Inside I stamped Mazel Tov! (stamp from Stampin' Up!</div>

Due to the time difference between Russia and the U.S.A., we decided to ring in the New Year on Moscow time, which was about 4:00 p.m. here in Indiana. Elena told us about their traditional way of celebrating the New Year. She even had a video greeting from her parents to show us.</div>

Each layer is rolled out like individual crepes. Ours were filled with blueberries, but Elena said that typically Поленница is filled with cherries. We think Raspberries would be wonderful too. The "mortar" is sweetened sour cream.</div>

When she saw my craft room overflowing with stamps, paper, embellishments and all of the fun crafting supplies I've acquired over the years she wondered if I'd mind if she'd learn to make cards. Julee Tillman, who is responsible for these past 10 years of inspirational Mojo Monday layout challenges, asked if anyone wanted to, to comment about the challenges and what they've meant to them. For myself, it is the layout that I have the most difficulty with when making a card. I love combining the stamps, papers, color medium, embellishments. But when it comes to putting them all together on a card, I always found that the most challenging aspect of card making. Every Monday Julee and a fresh and often VERY challenging layout. I have looked forward to each Monday, whether or not I actually participated in making a card, to Julee and her team's creative layout challenges and seeing how all of the participants used that layout in their own creative way.<br />

The Mister and I toasted in the New Year with some delicious Duck Egg Eggnog. I just had to share my recipe with you because it is THAT GOOD! You don't have to use duck eggs...chicken eggs work too. But I had an abundance of Duck Eggs and they make this eggnog so decadent and wonderful. And freshly grated Nutmeg is the true secret.<br />

Last year I gave Duck Egg Eggnog to several of my neighbors and they insisted that it become a yearly tradition. So I bottled up a few jars and they will be delivered today to ring in the new year.<br />

4 cups whole milk</div>

2 cups heavy cream (whipping cream)</div>

2/3 cup of maple syrup (white sugar is fine too if you don't have maple syrup)</div>
</li>

pinch of salt</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
6 Duck egg YOLKS (chicken eggs yolks work fine too)</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
6 Duck egg WHITES (chicken egg whites work fine too)</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
6 Tablespoons sugar</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
1 teaspoon freshly grated nutmeg</div>
</li>

2 teaspoons vanilla paste (if you don't have vanilla paste then use 2 teaspoons vanilla extract)</div>

1/8 teaspoon ground clove</div>

1/2 teaspoon ground cinnamon</div>

In a saucepan heat up the milk and cream until warm to the touch</div>

Whisk the sugar, egg yolks and salt together</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Temper some of the warm milk liquid into the egg yolks, stirring constantly</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Add the egg yolk mixture back into the saucepan of milk and heat until it reaches 160 degree F on a thermometer</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Take off the heat and let it cool</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Whip the 6 Tablespoons of sugar and the egg whites together until ribbon-y (just before you reach the soft peak stage)</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Stir the nutmeg, vanilla, clove and cinnamon into the egg white mixture</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Add the egg whites into the yolk mixture and stir together</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Keep refrigerated and be sure to stir well before serving.</div>

Every autumn the pumpkin craze starts up again and we find pumpkin in anything and everything. I must admit that I'm a crazy pumpkin fanatic too. Pumpkin Spice Latte, Pumpkin Spice Cherrios Cereal, Pumpkin Soup, Pumpkin Roll, Pumpkin Pie and ... PUMPKIN CORNBREAD with CINNAMON HONEY BUTTER!<br />
It's wonderful! Both the cornbread and the Cinnamon Honey Butter. Put them together and they are quite the feast! <br />

<strong><span style="color: #b45f06;">DIRECTIONS:</span></strong><br />
<ol>
<li><span style="color: black;">For the cornbread: Preheat the oven to 375 degrees.</span></li>
<li>In a mixing bowl whisk together flour, cornmeal, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves for 20 seconds. Make a well in the center of the flour mixture then set aside.</li>
<li>In a separate mixing bowl, add brown sugar and break up sugar with fingertips until no clumps remain. Add in melted butter and pumpkin and whisk to combine. Mix in sour cream and eggs until well blended. Pour mixture into well in flour mixture then fold with a rubber spatula and just until combined and no streaks of flour remain.</li>
<li>Spray and 8" by 8" baking dish with non-stick cooking spray and pour batter into pan. Spread batter into an even layer and bake in a preheated oven until toothpick inserted into center comes out free of batter, about 25 - 30 minutes. Cool slightly on a wire rack and then cut into squares. Serve with Cinnamon Honey Butter.</li>

<li>In a mixing bowl whip butter with an electric mixer until smooth. Add in honey, powdered sugar and cinnamon and mix on low speed until combined, then increase to high speed and whip until light and fluffy, about 2 - 3 minutes.</li>

I like to bake bread and not just plain white bread. I have a lot of different kinds of flour ranging from whole wheat, multigrain, rye, buckwheat, graham...the list goes on. I use a lot of whole wheat flour and I needed another canister to store it in. While rummaging around in the basement I came across a couple of huge, gallon+ size, glass pickle jars. You know...the kind that food service and vendors have that their pickles and condiments come in. That's when I decided to upcycle the jars into flour canisters.</div>

For the lettering I cut out my own lettering stencil to spell our FLOUR in a fun script. Then I used a Martha Stewart floral design stencil beneath the word <em>FLOUR. </em>I taped the stencils to the glass jar and applied the Martha Stewart Glass etching liquid with a foam brush over the letters and design.</div>

<strong><em>A Wave from Mama</em></strong> is the second novel in A. Robert Allen’s series, <em>Slavery and Beyond</em>. An historical fiction novel that begins in the year 1863, following the Draft Riots, in Weeksville, New York where former slaves find refuge in the camp where they found refuge and yearned to start a new life. It is a history lesson in post civil war tense relations between Blacks, Irish immigrants, gangs and police corruption and incorporated in the story is the historic importance of the building of the Brooklyn Bridge. <br />
<br />
The reader is immediately introduced to the central characters, Venture Simmons who is a socially awkward and physical small but very agile boy who witnessed the rape and murder of his mother, and the man, Moses Brown, who would become Venture’s confidant and best friend. Venture promises his Mama’s memory to all with the shouts, “You killed Mama, and you’re all gonna pay!” <br />
<br />
The story of Venture is touching with the love and friendship of the people who would become his family who take him in as their own family (Esther, Thomas, Mabel and Horace Washington), his friend Moses, the young girl Grace who would eventually become his wife, and John Singleton and most importantly Venture’s love and devotion to his Mama’s memory. This love and friendship all in the midst of the tumultuous time in history. <br />
<br />
<strong><em>A Wave from Mama</em></strong> is a history lesson of events that I wasn’t aware of; that is the Draft Riots, the clash between the Irish and Blacks and the history and significant importance of the building of the Brooklyn Bridge. I was immediately drawn in to the story. I thoroughly enjoyed this book and thank the author, A. Robert Allen, for teaching me about these aspects of post civil war history and slavery that I knew little about in a most captivating novel. <br />

I was cleaning and putting away supplies in my craft/sewing room and discovered some very old supplies. Do you remember the FASCINATOR stapler? It was all the rage about 10 years ago. I decided to put it back in use to attach the ribbon tape. And the Designer Paper is some very, very old Anna Griffin paper. I always have loved Anna Griffin supplies and this floral paper was one of my all time favorites. I had a scrap just large enough to use for this card. This summer has been excellent for my garden and I will bet for yours too! We've had the heat, the rain, the humidity and now my garden is producing a bounty that is hard to keep up with. But what do you do when you've made all of the pickles you can use, made salsa, sauce, frozen vegetables and have run out of ideas what to put up next in your larder for the winter? I have the answer! Make Gazpacho!<br />
<br />
Gazpacho is a soup made of raw vegetables and served cold, usually with a tomato base. Gazpacho originated in the southern Spanish region of Andalusia. And, Gazpacho is the perfect solution to the question, "What do I do with all of these fresh vegetables?". <br />
<br />
It always seems too, that when you are doing the bulk of your canning and preserving, the temperature soars to the 100+ temperatures...or at least feels like it. Once again, Gazpacho will bring welcome relief to meal planning because it is a cold, fresh soup that fills you up without heating up the kitchen.<br />

This is how I make Gazpacho:<br />

2 lb tomatoes, peeled, cored and seeded (about 6 medium)</div>
</li>
<li><div style="text-align: left;">
1 lb cucumbers, peeled, seeded, chopped (about 2 medium)</div>
</li>
<li><div style="text-align: left;">
1 cup chopped onion (about 1 large onion)</div>
</li>
<li><div style="text-align: left;">
1 cup chopped green pepper </div>
</li>
<li><div style="text-align: left;">
1/2 cup chopped celery (about 1 stalk)</div>
</li>
<li><div style="text-align: left;">
1/2 cup red wine vinegar</div>
</li>
<li><div style="text-align: left;">
1/2 teaspoon red pepper flakes (Optional. You can also add hot sauce or cayenne pepper) </div>
</li>
<li><div style="text-align: left;">
1 clove garlic, minced</div>
</li>
<li><div style="text-align: left;">
4 Tablespoons fresh herbs, chopped. (I used a combination of fresh parsley and thyme)</div>
</li>
<li><div style="text-align: left;">
1 teaspoon salt</div>
</li>
<li><div style="text-align: left;">
1/4 teaspoon black pepper</div>
</li>
</ul>

<li>COMBINE all ingredient in a large bowl or stock pot.</li>
<li>LADLE soup into clean jars leaving 1/2 inch headspace. Place lids and band or plastic storage caps on jars. Twist on lids and label.</li>
<li>FREEZE up to 1 year.</li>
</ol>

That's it! That's all you do and you can enjoy your GAZPACHO today and also once the snow begins to fly and you have a craving for fresh vegetables in the winter. All you'll need to do is pull out a jar or two from your freezer and thaw.<br />

I LOVE GAZPACHO with a grilled cheese sandwich. That sounds like year round comfort food, doesn't it?<br />

Ahhhhh...SPRING! We've been working as much as possible throughout the winter on our little farm preparing the barn for the arrival of our planned "livestock." This past Friday I got my very first ever ducklings.<br />

The are so C+U+T+E !! I don't know the gender of the ducks. I'm hoping for girls as I'd really like to be able to gather duck eggs one day. <br />

These three ducklings are American Pekin Ducks. When mature, they'll look like the duck on the Aflac commercials.<br />

Ducklings grow really quickly. Just since Friday they've nearly doubled in size. They are in their brooder for the next several weeks. They're so much fun to watch. They are very curious and quite comical in their antics. <br />

In other news, the baby chicks will be arriving around the 20th of April. Then in May we are hoping to have the horses transported here from Canada. Besides the animals, I'm getting seedlings started for my vegetable and herb gardens. So it is a very busy time of the years...and I'm loving every second of it.<br />

I am a Peanut Butter and Chocolate fanatic. I love the combination. I actually crave it so much that I began searching for a peanut butter and chocolate cake recipe. Of course, Pinterest features a wide selection of various types of cakes and fillings. For this cake I combined a little of this and a little of that from several recipes and came up with this cake. The Mister and I loved it! I should add we actually liked it best after it was a few days old. It was still quite moist and the flavors seemed richer and more flavorful than the first day we cut into it. The peanut butter center is more cake-like than cream <span style="font-family: Times, "Times New Roman", serif;">filling</span>. I like that too. </div>

<span style="font-family: Times;">Preheat the oven to 350 degrees F. Spray a bundt pan with vegetable oil spray. In a small saucepan, melt 2 ounces of the chopped chocolate over low heat, stirring constantly. Scrap the chocolate into a medium bowl and let cool slightly. Whisk in the oil and sugar until smooth, then whisk in the egg.</span></div>

In a small bowl, whisk the flour, cocoa powder, baking soda and salt. Add half of the dry ingredients to the chocolate mixture along with 1/2 cup of the coffee and 1/2 cup of buttermilk; whisk until smooth. Add the remaining dry ingredients, coffee and buttermilk and whisk until smooth.</div>

<li><div class="separator" style="clear: both; text-align: left;">
<strong><span style="color: #b45f06;">FOR THE PEANUT BUTTER CAKE FILLING</span></strong>: In a medium bowl, cream together butter and peanut butter until smooth. Add the sugar and mix until combined well. Add the egg and mix until combined.</div>

<li><div class="separator" style="clear: both; text-align: left;">
Fold in the flour and salt. Add the cream and stir to combine. Mix until flour in completely incorporated.</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
<strong><span style="color: #b45f06;">CAKE ASSEMBLY</span></strong>: Add half of the chocolate cake batter to the prepared bundt pan. Spoon the peanut butter cake filling on top of the chocolate layer, distributing the peanut butter batter evenly. Now spoon the remaining chocolate cake batter over the top of the peanut butter batter.</div>

<li><div class="separator" style="clear: both; text-align: left;">
<strong><span style="color: #b45f06;">BAKE</span></strong> for 50 - 60 minutes at 350 degrees F, or until a toothpick or cake tester inserted in the center of the cake comes out clean. Let the cake cool in the pan for a couple of minutes before unmolding. Let cake cool to room temperature on a wire rack.</div>

In a small saucepan, bring the cream to a simmer (Do not allow it to come to a full boil, it will curdle) In a heat proof bowl, combine the remaining 4 ounces of chopped chocolate with the corn syrup and butter. Pour the hot cream over the chocolate and let it stand for a couple minutes to soften the chocolate and then whisk until smooth. Let the ganache glaze cool until it is thick, yet still pourable, about 5 minutes.</div>
</li>
<li><div class="separator" style="clear: both; text-align: left;">
Pour the chocolate glaze (the ganache) over the cooled cake. Let the cake stand until the glaze is set, about 30 minutes.</div>

<strong><span style="color: #b45f06;">PEANUT BUTTER DRIZZLE:</span></strong></div>

Stir together sifted powdered sugar, peanut butter and salt. Add the milk and stir until smooth. Add additional milk if the glaze is too dry and stiff. It is too runny add additional sifted powdered sugar. Drizzle the peanut butter glaze over the chocolate glazed cake.</div>

The Mister has been <strike><span style="color: red;">whining</span></strike> politely asking me to make bread, or as he says, <em>"I want some good, chewy, crusty bread! Something with bite and chew."</em> So....what else could I do but make a loaf of bread.<br />

A year or so ago I purchased <strong><u><span style="color: #990000;">THE BREAD BIBLE</span></u></strong> written by Rose Levy Beranbaum. Truly a bread recipe book if you want to know how to make and bake good bread. I handed the heavy tomb (it IS a big and heavy book) to the Mister and asked him to pick out any bread he would like and I'd give it a go. <br />
<br />
The techniques and baking process Ms. Beranbaum uses are explained well in step by step format. The Bread Bible contains a huge variety of different types of breads, rolls, pizza crust. The ingredients are simple but it is the process...both in the making of the <em><strong>Dough Starter</strong></em> or <strong><em>Biga</em></strong>, as it is called as well as the method of baking. This bread starts out baking in a 500 degree F oven for 5 minutes and then the temperature is lowered to 450 degrees F for another 20 minutes. Prior to putting the bread into the oven at the preheated 500 degrees you put ice cubes on a tray of the oven floor and then put the bread in on the lowest shelf. This creates the moisture in the very hot oven needed to create this fabulous bread.<br />

Pugliese bread is very much like Ciabatta or Focaccia breads. Chewy, big air holes and flavorful. It is a fairly small loaf; about 6 inches across and 3 inches high. I don't think it will last through the day at the rate The Mister is eating it so I should get back in the kitchen and see what other tasty recipes I can find in <strong><em><u>The Bread Bible</u></em></strong>, by Rose Levy Beranbaum. I highly recommend this book if you enjoy making bread.<br />

Do you love Chevre as much as I do? The pure creamy goodness of this delightful goat cheese is truly one of my guilty pleasures. I've only ever eaten goat cheese on salads or in pasta recipes, so imagine my delight when I was reading The <a href="http://beekman1802.com/recipes/blueberry-chevre-custard-and-basil-pie/">Beekman 1802</a> blog and saw this recipe for Blueberry Chevre Custard and Basil Pie. OH!! EMM! GEE!! I had to make it! And the chevre goat cheese wasn't the only aspect of the recipe that caught my attention. BASIL was also a key ingredient. I love Basil and why not pair it with blueberries and chevre in a dessert. Josh and Brent (the Fabulous Beekman Boys) are geniuses!</div>

2 cups of fresh or frozen blueberries</div>

1 cup of heavy cream</div>

1/2 cup granulated sugar</div>

Preheat oven to 350 degrees F.</div>

Pour 2 cups blueberries (fresh or frozen) into the pie crust.</div>
</li>

Top blueberries with 12 basil leaves torn into small pieces.</div>
</li>
<li><div style="text-align: left;">
Mix together 1 cup heavy cream, 1/2 cup granulated sugar, 2 eggs, and 8 ounces of Chevre cheese. Pour over blueberries and basil in the pie crust.</div>
</li>
<li><div style="text-align: left;">
In a medium bowl, mix together the sugar and flour. Cut in butter with a fork and mix just until the sugar/flour/butter mixture is crumbly. Top your pie with the crumb mixture and sprinkle the oatmeal over the top.</div>
</li>
<li><div style="text-align: left;">
Bake in preheated oven (350 degrees F) for 50 to 55 minutes, until the custard is set.</div>
</li>
<li><div style="text-align: left;">
Serve pie chilled or at room temperature. Pie may be topped with whipped cream (or English custard is good too!)</div>

<span style="font-size: large;"> Albondigas Soup.</span> </div>

Albondigas Soup is a classic Mexican soup made with meatballs (albondigas). I love this soup for its flavor and also for the ease with which it is to prepare. You can change ingredients to suit your own taste without losing the flavor of the meatballs and vegetables. And, the aroma of the soup while it is simmering in your soup pot is wonderful!</div>

<span style="color: #b45f06; font-size: large;"><em>Albondigas Soup (Mexican Meatball Soup)</em></span></div>

<div style="text-align: left;">
<strong><span style="color: #b45f06;">Ingredients:</span></strong></div>
<ul>
<li><div style="text-align: left;">
2 tablespoons olive oil</div>
</li>
<li><div style="text-align: left;">
1 large onion, chopped</div>
</li>
<li><div style="text-align: left;">
1 large clove of garlic, chopped</div>
</li>
<li><div style="text-align: left;">
3 quarts of beef stock OR chicken stock. <em>(I used beef stock today but I have used chicken stock when I've made it in the past and it is good too. The meatballs will add their own flavor to the stock)</em></div>
</li>
<li><div style="text-align: left;">
1/2 cup of tomato sauce</div>
</li>
<li><div style="text-align: left;">
2 large carrots, diced</div>
</li>
<li><div style="text-align: left;">
1 large leafy stalk of celery, diced</div>
</li>
<li><div style="text-align: left;">
1/2 pound of green beans cut into 1 inch pieces <em>(I prefer green beans but tonight I didn't have green beans so I substituted one can of black beans. Use whatever you have on hand.)</em></div>
</li>
</ul>
<ul>
<li><div style="text-align: left;">
1/3 cup of white rice</div>
</li>
<li><div style="text-align: left;">
1 pound of ground beef</div>
</li>
<li><div style="text-align: left;">
1/4 cup fresh mint leaves <em>(you can use a couple teaspoons of dried mint if you don't have fresh. You can also use cilantro if you prefer it).</em></div>
</li>
<li><div style="text-align: left;">
1/4 cup chopped parsley</div>
</li>
<li><div style="text-align: left;">
1 raw egg</div>
</li>
<li><div style="text-align: left;">
1 1/2 teaspoons salt</div>
</li>
<li><div style="text-align: left;">
1/4 teaspoon freshly ground black pepper</div>
</li>
<li><div style="text-align: left;">
a dash of cayenne (<em>optional</em>)</div>
</li>
</ul>
<div style="text-align: left;">
<ul>
<li>1 1/2 cups of frozen or fresh peas</li>
<li>1 teaspoon of dried oregano, crumbles</li>
<li>salt and pepper to taste</li>
<li>1/2 cup chopped fresh cilantro to garnish</li>
</ul>
<strong><span style="color: #b45f06;">Directions:</span></strong><br />
<ol>
<li>Heat the oil in a large soup pot over medium heat. Add onion and cook until tender <em>(about 5 minutes)</em>. Add the garlic and cook a minute more. Add the broth and tomato sauce. Bring to a boil and then reduce the heat to a simmer. Add the carrots, celery and beans.</li>
<li>Prepare the meatballs: Mix the rice into the meat, addition the mint leaves and parsley, salt and pepper. Mix in the raw egg and form into 1-inch meatballs.</li>
<li>Add the meatballs to the simmering soup, one at a time. Cover and let simmer for 1/2 hour. Add the peas towards the end of the 1/2 hour so as not to over cook. Add a few pinches of oregano and sprinkle with salt and pepper, and a dash of cayenne if desired.</li>
<li>Garnish with Chopped fresh cilantro and serve.</li>
</ol>
<span style="font-size: x-small;"><em>Yields 6 - 8 servings. Left over soup freezes well.</em></span><br />
